Listeria
Listeria is a facultative anaerobe bacterium that has pathogenic strains which are usually the causative agents of the bacterial disease Listeriosis. Listeria is mostly found in soil and water, and generally contaminates consumable products at the raw material stage of production. Raw materials such as plants can become contaminated from the soil or from manure used as fertilizer. Animals can carry the bacterium naturally and can contaminate foods of animal origin such as meats and dairy products. Preventing Listeria in a production facility requires effective sanitation of food contact surfaces using sanitary cleaning products such as ethanol.
